I apologize in advance for what is to be a very brief and to-the-point post! It’s been a hectic week dealing with tech issues and seemingly never-ending errands and chores. I feel completely behind on everything. I *did* manage to get my act together enough this week to test out the photography setup in our new place (finally). Much stress, anxiety, and procrastination later — the setup actually worked better than I expected and I’m really happy with how the pics turned out!! This Dark Chocolate Honeycomb Cake is pure decadence. A rich chocolate cake slathered in the fudgiest, chocolatiest frosting you will ever have. Seriously SO GOOD. If you’re a chocolate lover, that is. And I am.
I wanted to pair this cake with something striking with a sharp color contrast so I decided to make some honeycomb for it. Honeycomb is the stuff that’s inside a Crunchie bar and it’s delicious. If you’ve never made honeycomb yourself, its actually super simple. All you need is some sugar, corn syrup, and baking soda. Cook it till it just starts to turn color, whisk in the (sifted) baking soda, pour into a pan and let it cool. Ideally you’d use a candy thermometer to assess the correct temperature, but it’s not necessary — you can kinda eyeball the color.
You’ll have some honeycomb left over after you make this cake. A simple way to use it up would just be to dip pieces into chocolate, like my friend Sam did in her recipe here.

This is a beautiful cake! Taste delicious too. My only problem was my honeycomb. It is not light and airy like in a crunchie bar, but chewy (stuck in your teeth chewy) and darker in color. Any suggestions? I’m thinking of redoing the honeycomb since it’s for a anniversary gift. Thank you for your delicious creations, I’ve done so many.

Hi Cecily! The honeycomb will get chewy once it is exposed to moisture/humidity. It will get chewy over time in the cake, moreso if the cake is refrigerated. For the honeycomb on the outside, I recommend putting that on just before serving/delivery and not refrigerating. The darker color just means that the sugar was cooked longer and got to a darker caramel stage.

Oh, I’ve been dreaming of this combo for ever, the flavors and color contrast, love it! But, I’ve never added honeycomb between layers because I was have always worried that the pieces would become “rubbery” and hard to chew, so here is my question, how does the honeycomb texture hold up between the layers? And as deco on top, if a client of mine orders this cake, will the honeycomb become soggy in a short amount of time?

Hi Catherine! The honeycomb between the layers will definitely become chewy over time. The decoration on top will be fine for a while, but it will get sticky over time. I don’t recommend refrigerating it personally.

I really love this cake… I think is perfect because is a great combination… The bitter flavour of dark chocolate and the sweet flavour of honey…. That cut looks so juicy…. I think today is going to be imposible, but in a couple of weeks I am going to have some free days, I will do it them…

Yum! This cake looks sooooo good, Olivia 😀 I love the look of those honeycomb shards. Pretty dangerous-looking… I like that you’re using it as a texture between the cake layers, too, and not just as decoration.
