This was so easy and delicious! Everyone loved it. I was VERY intimidated and worried about messing this up, but having made the recipe successfully the first time, I highly recommend it! Note – I have a stand mixer, which made it so easy to mix for 5 minutes.

Hi Mys Teri! The meringue would be less stable if less sugar was used. It does pair best with less sweet components šŸ™‚

I would give 5 stars, but, 1ā…” cup is too much sugar. The good thing is that the banana pudding isn’t very sweet, but the meringue is still too sweet! Otherwise, it’s beautiful! I had enough to cover s banana pudding pie and pipe into banana pudding cake.

Hi Becky! This is a Swiss meringue method which does not use water. Italian meringue does but it is not needed here.

Did I just miss that on my page or is there no need for water? I’m planning to make this in a couple of days to cover an Angelfood cake.

Hi Rhonda! I haven’t tried it with lemon myself so I can’t say for sure, but I would try whipping the meringue with 1 tsp lemon juice and then folding some zest in at the end.

I tried it with lemon extract, but was thinking using lemon zest might work better, and how much lemon juice?

Hi Mellie! Once you torch the frosting will be dry and coconut won’t adhere to it. If you torch after coconut though you could burn the coconut.
