In reply to Jodi. Hi Jodi! I haven't tried myself but know many people have. It will work fine! You just need to reduce the baking time - start checking them at about 8mins or so.

These look so yummy! I’m getting ready to mix them up and am wondering how they would bake in mini muffin tins, for bite-sized cookie cups. Have you tried mini muffin tins? What are your thoughts? I thinking the ratio of chocolate cookie to peppermint cheesecake would be perfect!

We made these with Red Mill’s All Purpose Gluten Free Flour and followed the recipe exactly and it turned out fantastic. I like that they aren’t overly sweet and look perfect for a Christmas dessert. I wasn’t able to find black cocoa powder but they were still pretty.
