Hi Mel! Sorry to hear you didn’t love this one. The pastry cream should not be lumpy. It sounds like it wasn’t whisked enough once it was chilled and I just realized I missed this step in the instructions. My fault! Updating it now. The ganache can be chilled to speed up the thickening but should not be left in the fridge overnight as it will harden. I’ll clarify this too.

Overall it was OK.had trouble piping both the cream (kinda lumpy – maybe too much cornstarch?) and the ganache (which was rock hard from making a day in advance). Maybe could add some more instrucions about that? Next time I would just spoon in the custard in the middle, not pipe it. Also found rosettes on the middle made the cake too wonky bc they were not all the exact same size and they set up so firm. The cream was not quite sweet enough for me.

Hi Liv, just wanted to let you know that you are my go to page for anything cake!! I make your vanilla cake recipe all the time and it’s delish. Today, I made the pastry cream in this recipe to fill a 2 layer cake with fresh strawberries and it was a hit!! Can’t wait to try the vanilla cake recipe with a pineapple coconut cake filling which you have a few versions of to try for the next family bday (which is in August btw) anyway thanks for sharing your wonderful recipes with all us!

Hi Andrea! The exposed pastry cream can get a little funky the longer it sits (it forms an unappealing skin), but if you just do the pastry cream in the middle the cake will protect it, and chocolate on top.
