Hi Sally! I generally recommend that cakes are best for 2-3 days. After that it will start to dry out. Either bake closer to the day or freeze and thaw. You can also make each component in advance and freeze, thaw, then assemble.

Hi Alma! No, coconut flour would not give the same result. You could use an all-purpose gluten free flour blend though. Let me know how she likes it, this is one of my favorites!

My soon to be 7 y.o. daughter asked me for a coconut lime cake to celebrate her birthday. And here I am, planning on making it myself. I was wondering if I could use coconut flour instead of the all purpose flower? If so is there anything I need to do different? thanks so much. Hopefully I can get a reply soon since her birthday is this Saturday 😉
