Hi Karina! No, it wont have enough structure with just almond flour. You can use an all purpose gluten free flour substitute if that was your concern.

I just wanted to come back and say that I made this cake gluten and dairy free for a wedding cake and it turned great. It was the first wedding cake I have ever made and it turned out great. I did practice the cake several times before making it for the wedding, but it was great.

Joy of Baking shows 12 1/2 x 17 1/2 x 1 to be 12 cups which is the same as my recipe of three 6″ pans. I would use the recipe as is but I worry that 1″ tall is too short.

This is now one of our favorites. I appreciated that the directions were specific enough to make it easy to follow. My almond slices were more in pieces, so I only put them on the top of the cake. Cake is moist. The cake tastes like amaretto without being over powering. This was a hit!
