Let me start with I love your website. I have made so many cakes. My Ganache on this recipe curdled I tried everything to uncurdle. Nothing worked. I used an Irish whiskey that is made with fresh cream. I think that may have done it. Should I lower the butter amount?

Hi Laurie! I’ve experimented with my ganache a lot. If you leave it out here it will make the ganache a bit more firm. It’s possible it will work fine but I haven’t tried it myself so can’t say for sure.

Hi Anna! They are all 2″ tall and the cakes bake right to the top. The batter should make enough to fill each pan half full.

Hi there! I’m sorry to hear that. If it splits right away that usually means the cream was too hot and/or it didnt emulsify properly. You can usually bring it all back together using an immersion blender.
