Hi Rachel! Google tells me it should be ok but I am always extra cautious with that kinda stuff. I wouldn’t risk it and I’d store it in the fridge.

This was the first recipe of yours I’ve made – drawn in by your beautiful photos. 🙂 I’m an experienced baker, and I did wonder @ the recipe, but gave it a go ‘as is’.
The cake bordered on dry, and next time I will add additional sour cream or apple sauce (my go-to fat substitute), and perhaps up it by one banana.
It also bordered on bland – perhaps some cinnamon and nutmeg would have saved the day.
The frosting wasn’t near enough according to my eaters – they would’ve loved about half to double more. I think this was partly due to preference and dryness. I also needed way more than 5 tbsp maple syrup to make it pourable. (I used real maple syrup, which was very thick.)
It was eaten right quick at the event I took it too, largely because there were alot of guys there, the other dessert was cream puffs, & well, bacon.
I’m going to re-do with a few changes because I think it’s a good recipe that could be great with a few tweaks.

Hi Mary! I am so happy you love this one! I would do candied bacon because YUM. I would toss the chopped candied bacon in some flour and fold it in at the end.

LOVE this recipe! I make it often for pot luck suppers. You mention that you would add bacon to the cake itself. I’d like to try that. Have you tried it? Which would you recommend, candied or plain bacon?

I just use a baking spray and that works for me, but to be safe you could flour as well!
