This cake was excellent – a huge hit at my grandma’s birthday party! We’re german, grandma directly from Germany, and she was so excited when I made this Bienenstich kuchen (Beesting cake) recipe. Despite all the honey, the cake is not overly sweet. The diplomat cream is such a nice, light change from the typical heavier frostings. I did everything as directed here, but next time i might add some Disaronno liquor to the honey almond syrup!

I have a culinary degree, specifically in baking and patisserie. I’ve made many of your cakes, this blog is my go-to for delicious sweets, you have never let me down! I also need to be better about writing my reviews when I do so. Thanks for the recipe – i’m saving this one!

Hi Lauren! For sure, you can use just a pastry cream instead (no added whipped cream) or any kind of buttercream. A German buttercream would go well as it’s pastry cream based: https://livforcake.com/german-buttercream/

Your ingredients list for the honey and almond cake itself includes 1/2 cup of honey, but nowhere in the instructions do you include it before it is baked? Can yo tell me at what point should it be added?
