Hi Mary! My cakes tend to be more on the dense side rather than light and fluffy, but it shouldn’t be too dense and should rise almost to the top of the pans. This cake may be slightly more dense due to the addition of the strawberry powder. Otherwise, overly dense cakes can be from overmixing the cake batter once the flour is added (it develops too much gluten) or not using room temperature ingredients so the cake batter doesn’t emulsify properly.

However, when i made it came out SO dense. Like a brick of cake! (A delicious brick, but a brick nonetheless.) Did i do something wrong, or is it supposed to be a very dense cake? The buttercream, especially with added strawberry powder was so delicious! The cake was way too dense and unfortunately, it looked undercooked. Having said that, could you let me know which of your cake recipes are on the lighter side? Something more fluffy and less dense?
