Hi Topher! I have never gone by temperature myself but it would be around 350F or so. If it seizes up that means it has crystalized. Make sure the sugar mixture is fully combined and dissolved before boiling and do not stir from that point onwards. I hope that helps!

I used your recipe to make some caramel to pipe on some cookies for Christmas. I tried to make the same cookie today, but I couldn’t remember where I got the caramel recipe last time, so just used one from Pinterest. After two failed attempts, I thought to myself “Wait, didn’t I use Liv for Cake last time?” As soon as I saw the recipe, I remembered that indeed I used yours! I will never try another one again! Printing this one off for safe keeping, haha! Also, just so glad yours comes out perfectly without sweetened condensed milk. I don’t like the taste of caramel made with it, even if supposedly it is easier.
