Cake is very bland, and the buttercream is too rich. I followed the recipe exactly! I bake with pumpkin often, so I was looking to diversify my fall recipes! Bummed.

Hi Angie! This cake will be more on the dense side due to the pumpkin in the batter, but it shouldn’t be too dense and should rise almost to the top of the cake pans.

Baking powder is in date also. Not sure what the problem was…I am sure that it will taste great and be eaten despite its appearance.

Each layer was a little under an inch tall and DENSE. I tested my baking powder and its still good, and I put the pans in the oven immediately. Any ideas?

Definitely worth the do-over!!
Cake with the swirled buttercream is gorgeous!! Just the right amount of texture to provide a lovely setting for the pumpkins, which are so cute. Can’t believe what a difference vs. the smooth cake. Happy to see someone else has the same experiences as I do. The struggle is real! LOL
