Instead of turning this into a beautiful cake (no time to deal with frosting!), I cut the cake into normal pieces and sliced each piece in half horizontally. A dollop of pie filling was put on top of the bottom piece along with some crumbles. It was then topped with the other half of the piece of cake, another dollop of pie filling and crumbles were put on top. It was pretty and delicious! Thank you for sharing your recipe.

Hi Carey! The standard SMBC recipe is a 3:2:1 ratio but it makes a lot of buttercream so I’ve reduced the amount of butter in my other recipes. This is a larger cake though and needs the extra butter 🙂 I hope you love it!

I think there’s an error in the quantity of butter in the SMBC. Most of your recipes have a 3:1:1 (or 6:2:2) ratio of egg whites to sugar to butter, but this one asks for 3 cups of butter when it should only be 2 cups. Hopefully this works. Otherwise the recipe looks amazing.

It has a ton of tips and troubleshooting: https://livforcake.com/swiss-meringue-buttercream-recipe/ The ingredient amounts vary slightly from recipe to recipe depending on how much buttercream is needed, but they should all turn out fine. Where were you running into the issue?

I also had trouble with this buttercream as well. I’ve made one of your other buttercream recipes and it came out good. Two attempts with this one and it would not come together. I think I’ll use the recipe and the buttercream from your turtles cake (which came out fantastic) and give it another try.

Have you seen my tutorial with tips & troubleshooting? https://livforcake.com/swiss-meringue-buttercream-recipe/ CC frosting would work but it’s usually softer so there may be an issue with holding in the apple filling. Love this cake. My attempt at SMBC however was an epic fail (after many tries I got an edible version). To avoid emotional trauma the next time I wonder if astore bought creme cheese icing coumd be doctored to work?
