Hi Cecily! The honeycomb will get chewy once it is exposed to moisture/humidity. It will get chewy over time in the cake, moreso if the cake is refrigerated. For the honeycomb on the outside, I recommend putting that on just before serving/delivery and not refrigerating. The darker color just means that the sugar was cooked longer and got to a darker caramel stage.

Taste delicious too. My only problem was my honeycomb. It is not light and airy like in a crunchie bar, but chewy (stuck in your teeth chewy) and darker in color. Any suggestions? I’m thinking of redoing the honeycomb since it’s for a anniversary gift. Thank you for your delicious creations, I’ve done so many.

Hi Catherine! The honeycomb between the layers will definitely become chewy over time. The decoration on top will be fine for a while, but it will get sticky over time. I don’t recommend refrigerating it personally.

But, I’ve never added honeycomb between layers because I was have always worried that the pieces would become “rubbery” and hard to chew, so here is my question, how does the honeycomb texture hold up between the layers? And as deco on top, if a client of mine orders this cake, will the honeycomb become soggy in a short amount of time?
