Hi Jordan! The cakes should rise to the top of three 6×2″ pans. If they aren’t then I would check to make sure your baking powder is still active. How tall are your cake layers coming out?

Tried this recipe multiple times now and can’t get the cake to rise. I tried all the different hacks/troubleshoots and it’s still a very short/dense cake. Not sure what I’m doing wrong at this point? Taste is delicious, though! ]]>

Hi Pamela! So happy you loved it. It will work fine as cupcakes. The recipe should make 18-24 depending on size. Start checking them at 15mins or so.
