I wanted to try something different from the usual banana bread go to for very ripe bananas. While the cake tasted fine, it didn’t rise much, even using cake flour. I mixed everything by hand to try to avoid overmixing with an electric mixer.

I had used two 8″ round pans and because it didn’t rise much, the frosting recipe seemed to make too much, so I made it in half. Way too sweet for my liking; although using two cups powdered sugar seemed to overrule the tang I expected from the cream cheese. If I ever use this recipe again, I might try adding a little lemon juice to get that tangy frosting.

Hi Sehar! Adding bananas to a cake recipe requires a lot of experimentation. You can try replacing the eggs with banana instead if you’re using a mix, but I’m not sure of the ratio. Definitely test it out first!

This is my father in law’s favorite cake. Unfortunately he is now following a keto diet because of his diabetes. I’m thinking of making something similar for him for his birthday next week by adding blueberries and banana to a box of keto yellow cake mix. I know you mentioned that adding banana to cake makes it a little more dense. In your experience, when you add bananas to a cake do you need to increase your leavening agents? Thanks in advance!

Hi Muna! You can use oil instead but it will change the texture of the cake. It will be softer and have more of a greasy mouth feel, but it will also be more moist. It’s not a bad thing, just different.
